It’s become a bit of a trend at so-called fine dining restaurants (never understood quite what that meant, anyway – is everything that’s not fast food, fine dining?) – farm-to-table, or farm-to-fork, call it what you will. What it means, essentially, is that regional and local produce is used as much as possible.

It’s a trend I like, mostly because it results in more wonderful flavours. It also puts me further on the green list, which is a good thing but – let’s be honest here – hardly the priority for most of us when choosing a restaurant, so don’t pretend to be holier than thou.

Whatever your primary reason for embracing it, the trend undeniably makes sense, here’s why. The one caveat is that this being Malta it’s impossible to embrace it 100% without waving a permanent goodbye to some ingredients.
