Have you ever had a Soyeur au Champagne?

Also known to be Queen Victoria’s favourite cocktail, this drink blends wintery flavours with summer tones.

If you’re looking for an easy, yet absolutely delicious cocktail to help you get through January, then the Soyeur au Champagne cocktail is certainly worth a try. Named after the master mixologist at London’s The Connaught Bar, the drink is believed to have been Queen Victoria’s favourite cocktail. 

Ingredients:

  • 20 ml framboise eau-de-vie 
  • 20 ml orange cognac liqueur 
  • 10 ml fresh lemon juice 
  • 5 ml sugar syrup
  • 20 ml raspberry puree 
  • 30 ml Champagne
  • 1 small scoop vanilla ice cream

Method:

  1. In a cocktail shaker filled with ice, combine the liqueur, eau-de-vie, lemon juice, sugar syrup, and puree, and shake until the drink has chilled.
  2. Strain into an ice-filled Moscow Mule mug.
  3. Add the Champagne and then place the scoop of vanilla ice cream on top.
