Father’s Day: get the kids involved

Even the youngest ones can help prep this simple dip to go down with dad’s beer.

How about a special treat to go with that pre-lunch beer for Father’s Day. Bonus points as this Cheesy Pepperoni Dip is very simple to prepare and you can enlist the kiddos’ help to assemble the ingredients.

You need: 1 tablespoon vegetable oil, 1 diced white onion, 1 can green chillis, half a can diced tomatoes, 1 block of parmesan (cubed), half a block of Cheddar (shredded), 1 diced jalapeno, 3/4 cup pepperoni (chopped). Fresh chunks of baguette to serve.

Heat oven to 375 F. In a pan over medium heat, heat oil. Add onion and cook, stirring until softened, about 5 minutes. Add chiles and tomatoes; simmer. Reduce heat and stir in cubed cheese until smooth. Turn off heat; stir in cheddar and mozzarella until melted. Stir in jalapeno and half the pepperoni. Garnish with remaining pepperoni.
