Father’s Day: get the kids involved

Even the youngest ones can help prep this simple dip to go down with dad’s beer.

How about a special treat to go with that pre-lunch beer for Father’s Day. Bonus points as this Cheesy Pepperoni Dip is very simple to prepare and you can enlist the kiddos’ help to assemble the ingredients.

You need: 1 tablespoon vegetable oil, 1 diced white onion, 1 can green chillis, half a can diced tomatoes, 1 block of parmesan (cubed), half a block of Cheddar (shredded), 1 diced jalapeno, 3/4 cup pepperoni (chopped). Fresh chunks of baguette to serve.

Heat oven to 375 F. In a pan over medium heat, heat oil. Add onion and cook, stirring until softened, about 5 minutes. Add chiles and tomatoes; simmer. Reduce heat and stir in cubed cheese until smooth. Turn off heat; stir in cheddar and mozzarella until melted. Stir in jalapeno and half the pepperoni. Garnish with remaining pepperoni. Serve with the baguette. Recipe adapted from thepioneerwoman.com. Find more appetiser recipes at Culinary.net.
